Charles Dufour started working in the family business (Robert Dufour) in the mid-2000s. Soon, the reasonable traditionalist approach of the family domaine is no longer enough, and is clearly oriented towards organic farming, starting with the decommissioning of herbicides. In the vineyard, therefore, only copper, sulfur, herbal teas and biodynamic preparations. The organic certification (Écocert) comes with the 2010 harvest, the very one with which Charles launches its production line, under the double brand "Champagne Charles Dufour" and "Champagne Bulles de Comptoir" (the latter already used in previous years under experimental). Five of the 15 hectares of farms, rented, intended exclusively for the production of fully ecological champagne, both in the vineyard and in the cellar. This is how, for more than three years, this young winemaker with very clear ideas searches through his farm "Les Vins du 7" the clearest expression of a terrifying and undervalued terroir, that of the Kimmerian area of Bar-sur-Seine , in the Aube. The vineyards are located on the territory of the municipalities of Landreville, Essoyes and Celles-sur-Ource.
