Château de Saint-Aubin Chassagne-Montrachet Premier Cru "Les Chenevottes" 2017
Grapes: 100% Chardonnay Intense golden green colour. Very aromatic nose with notes of white fruit (pear), white flowers (acacia) and sweet spices. Fresh in the mouth, notes of lemon and menthol. Splendid fullness on the palate. Food pairing: with a slice of creamed poultry, a pike-perch fillet in white butter or a Comté cheese matured for 24 months.
Les Chenevottes" is a Premier Cru located in the northern part of the country. Facing east, it is one of the treasures of the Domaine du Château de Saint-Aubin. The marl soils of this climate are composed of both fine clay and straight limestone. The marls bring a lot of minerals to the wine, while the clay gives it volume with aromas of white and yellow fruit, almonds, flowers. Finally, the limestone gives it length, elegance and salinity to the palate. Once harvested, the grapes are pressed in a press to obtain whole grapes. Pneumatic. The must is then static decanted at 12° for about 24 hours before being increased. Alcoholic and malolactic fermentation are carried out in new French oak barriques. Refinement lasts 18 months on the lees before bottling. Maturation of 24 months. Alcohol content: 13% vol.
