The 2016 vintage, characterized by a winter with frequent rainfall and repeated and marked drops in temperature, was characterized by a spring that was not too mild. The frequent but not abundant rainfall between the end of April and mid-June, despite the significant drops in temperature recorded in the first ten days of May, favoured the early and vigorous vegetative development of Chardonnay and Grechetto. The slight initial anticipation of the vegetative phases was progressively rebalanced in July. A hot summer with good temperature ranges between day and night favoured the development of the aromatic components of the two varieties. The harvesting of Chardonnay for Cervaro began in the third ten days of August followed by the harvesting of Grechetto, which was two weeks later in nature, which ended in mid-September.
